This gluten-free, dairy-free Hidden Veggie Meatloaf is packed with protein and perfect for meal prep!
Made in a 9×13-inch pan versus a traditional loaf pan, it’s an easy, family-friendly twist on meatloaf that sneaks in extra vegetables without sacrificing flavor.

Hidden Veggie Meatloaf (gluten-free)
Ingredients
- 1 Tbsp olive oil
- 1 large onion diced
- 1 medium green pepper diced
- 1/2 cup celery diced
- 1/2 cup carrot diced
- 1 6-oz can tomato paste
- 1/3 cup liquid aminos
- 2 tsp garlic powder
- 1 tsp ground sage
- 1 tsp oregano
- 3 eggs
- 1 cup oatmeal
- 3 lbs lean ground beef
- 1/2 cup ketchup
- salt & pepper
Instructions
- In a large sauté pan, heat olive oil over medium-high heat.
- Add vegetables (diced onion, green pepper, celery, and carrots) and season with salt and pepper. Cook until translucent, about 10 minutes.
- Remove vegetable mixture from heat and add tomato paste, liquid aminos, and spices. Season generously with salt & pepper; mix until combined. Cool for 5-10 minutes.
- While the vegetable mixture cools, add eggs to a large mixing bowl; whisk. Add oatmeal, ground beef, and vegetables to the mixing bowl. Mix until well combined; I prefer using gloved hands.
- Press meat and vegetable mixture into a 9-inch x 13-inch baking pan. Top with ketchup.
- Bake in a preheated 375 degree oven for 50-60 minutes until bubbly and internal temperature is 160 F.
