What I love most about this recipe is that it is simple and versatile – only 2 ingredients and 3 different cooking methods!
You can make air fryer stuffed mini peppers – a fan favorite – or cook on the grill or in the oven. I had someone even inquire about cooking them on a pizza pizzazz, and I say, why the heck not?!
You really can’t screw this one up! And no, that’s not a jab at anyone who is self-conscious in the kitchen. I promise you will hear many “ummmms” and “aaahhhs”, and at least one person will ask for the recipe!
Family & Allergen-friendly
I like to make this stuffed mini pepper recipe when hosting family and friends because (1) everyone raves about them, and (2) I can prepare the ingredients ahead of time.
You can cut and seed the peppers in advance. If you want to take it a step further, you can even fill them with the Boursin cheese and keep them refrigerated for up to 2 days. When you are ready to cook, choose your preferred heating method – air fryer, grill, or oven – and wa-laa!
If you plan to host for a larger crowd, I would recommend following the grilled mini pepper recipe or oven-baked stuffed pepper recipe. This way, you have a larger surface area for cooking, and you aren’t fretting about rotating the air fryer stuffed mini peppers every 4-5 minutes!
For friends or family with dietary restrictions, this mini stuffed pepper recipe is vegetarian and gluten-free. It is also low carb and keto-friendly for those watching their waistlines.

Grilled Mini Stuffed Peppers
When I am not crunched for time, my favorite is preparing this recipe on the pellet grill. The timing is flexible, so you can pull these off as an appetizer or side dish to be served when your main course is ready.
For most people, though, let’s get real. We’re all in a hurry and just want to get dinner on the table ASAP. Am I right?
That’s why I polled my audience {and by popular demand} made this Air Fryer Stuffed Mini Pepper recipe.
Air Fryer Mini Stuffed Peppers
When air frying this mini stuffed pepper recipe, it will take several batches to cook. However, the cooking time is fast – only 4-5 minutes each. I promise it’s worth it!
Because there are so many air fryers out there nowadays, make sure you keep a close eye on the first couple of batches to prevent overcooking. Again, really hard to screw this up though because they taste great with a little char on them!
Air Fryer Stuffed Mini Peppers {low carb, keto, vegetarian}
Ingredients
- 1 ½ lbs mini sweet peppers
- 2 pkg Boursin cheese
Instructions
PREPARATION
- Cut mini peppers in half length-wise.
- Use spoon to seed and clean inside of pepper; set aside.
- With a rubber spatula or spoon, spread a thin layer of Boursin cheese into cut-side of mini pepper.
- Peppers can be prepared in advance and stored in the refrigerator for up to 2 days.
AIR FRYER
- Preheat air fryer to 375°F.
- Add cheese-stuffed peppers to air fryer in a single layer. Cook for 4-5 minutes until cheese is lightly browned. It will take several batches to cook all the peppers.
GRILL
- Preheat grill or smoker to 400°F.
- Arrange cheese-stuffed peppers in a single layer on aluminum foil.
- Carefully slide aluminum foil onto top shelf of grill and cook for 20-30 minutes, until cheese is lightly browned.
OVEN
- Preheat oven to 400°F.
- On a rimmed baking sheet, arrange stuffed mini peppers in a single layer.
- Bake for 20-30 minutes until cheese is lightly browned.
- If desired, broil on high for 1 minute to brown cheese.

These are delish! And only 2 ingredients! I almost felt guilty eating so many thinking something this tasty has to be unhealthy.
