Jalapeño Popper Chicken Casserole {low carb, keto}
This low carb cauliflower jalapeño popper chicken casserole is keto-friendly with only 5 gram net carbs. Quick assembly and dietitian-approved!
Ingredients
- 4 oz cream cheese
- 3 eggs
- 2 Tbsp hot buffalo sauce
- 1/2 tsp garlic powder
- 1 lb chicken breast raw, cubed
- 1 pkg cauliflower rice frozen
- 2 jalapeños seeded and chopped
- 3/4 cup shredded cheese
Instructions
- Preheat oven to 375°F. Spray a 9 x 13-inch baking dish with cooking spray.
- Blend cream cheese, eggs, hot sauce, and garlic powder until smooth.
- In a large bowl, combine cream cheese mixture, chicken, cauliflower rice, and jalapeños. Pour into baking dish and press mixture into an even layer.
- Sprinkle with cheese. Bake for 40 minutes until chicken is cooked through; broil during last 5 minutes of cooking.
