Add squash to a large mixing bowl. Add olive oil and salt and pepper; toss to coat.
Transfer squash to air fryer and cook at 400 degress for 20 minutes, tossing halfway through*. *I used the "Vegetables" setting on my Gourmia digital air fryer which automatically defaults to a 20-minute cook time at 400 degrees and includes a reminder to toss vegetables at 10 minutes.
